Easy Tomato Basil Soup


The weather in Texas finally feels like Fall!! Oh Happy Day!! To celebrate the cooler temperatures, I decided to make one of my all time favorite recipes, Tomato Basil Soup.

Ingredients Needed

  • 48 ounces of Tomato Juice

  • 28 ounces of Crushed Tomatoes

  • 1 stick of Salted Butter

  • 1 cup of Half and Half

  • 5 ounce package of Fresh Basil

  • Parmesan Cheese to taste

  • Fresh Cracked Pepper to taste



Step One:


Combine the tomato juice and the crushed tomatoes in a large soup pot. Simmer over low heat for 30 minutes.



Step Two:


After the juice and tomatoes have cooked and then cooled for at least 30 minutes, transfer the combination to a mixing bowl. (sorry for the poor pictures, its an overcast day).



Step 3:


Transfer small batches to a food processor or blender. Add your basil, and puree until smooth. Be patient, it will probably take 3 batches. Puree each batch thoroughly. This is essential for creamy, smooth soup. After you puree each batch, return it to your soup pot.




Step 4:


Once all the puree is returned to the soup pot, turn the heat to medium, and add the stick of butter. Stir until dissolved.



Step 5:


Add the cup of half and half, stirring well. Cover and simmer on medium heat for 20 minutes.



We like to garnish our soup with lots of Parmesan cheese and fresh cracked pepper. This soup is great coupled with a skillet grilled cheese, yum!!
